Blue Grove Hill Sauvignon Blanc
The Blue Grove Hill Sauvignon Blanc is produced from the grapes grown
on the cool South facing slopes of Capaia. Grapes are selected according
to ripeness and character and harvested by hand during the cool morning
hours. Following a skin contact period of approximately 6 to 9 hours, the
free run and press juices are separated by a gentle pressing.
The wines resulting from a cool fermentation in French Oak as well as stainless
steel tanks are then carefully blended together to produce a Sauvignon Blanc
of outstanding quality.
Though this wine may be enjoyed immediately, it should continue to develop
beautifully for up to 3 to 4 years from vintage.
